Air Fried Spice Rubbed Turkey Breast

Juicy and flavorful turkey breast seasoned with spices and air-fried to perfection. Enjoy Thanksgiving meals all year round.
Ingredients
- For the brine
- 1 cup boiling water
- ½ cup salt
- ¼ cup sugar
- 1 cup ice
- 6.5 pound turkey breast (leave the bone and skin on, makes for a juicer-more delicious bird)
- Cold water to cover the turkey
- For the rub
- 1 tablespoon whole black peppercorns
- 1 tablespoon whole allspice
- 1 teaspoon salt
- 2 tablespoons refined peanut oil*

Directions
- Let me begin by saying I think turkey is one of the most delicious birds. In my home, Thanksgiving meals happen not just on Thanksgiving, but about four times a year – my friends and family will concur. Full disclosure, I’ve never wanted an air fryer, maybe because I have two ovens and a steam oven in my home, but I had to buy an air fryer to test this recipe and I now see for myself why people love it so. The peanut oil, and spices, combined with the cooking process in the air fryer made for delicious, juicy turkey.
- For the brine
- Place the salt, sugar, and boiling water in the pot and mix until the salt and sugar dissolve. Add a cup of ice, place the turkey in the pot and fill with cold water to cover the turkey. Cover pot and refrigerate overnight.
- For the rub
- Remove the turkey breast from the brine, pat dry and set aside. In a spice or coffee blender, finely grind the black peppercorns and whole allspice (there’s nothing more magical smelling in a kitchen than fresh ground spices). Remove the spices from the spice blender and place in a small bowl. Add salt, peanut oil and mix well. Using your hands or a brush rub/brush the spice mix all over the turkey. Place the turkey onto the air fryer pan and place it in the bottom rack of the air fryer (I used a 20 quart air fryer). Set the air fryer at 350°F for 1 hour 40 minutes. Remove from the air fryer and let it rest for 10 minutes before carving.
- Notes: You can find black peppercorns and allspice in most grocery stores in the spice aisle.
