Golden Peanut Glazed Ribs

Ingredients

  • 1 cup fresh mixed greens
  • 1 ounce sliced red bell pepper
  • 2 tablespoons peanut vinaigrette, sub recipe
  • 1 tablespoon charred runner peanuts
  • 2 prepared, dry rubbed, baby back pork ribs, hot
  • 2 fluid ounces Carolina gold peanut butter sauce (see recipe)
  • Garnish
  • Fresh microgreens as desired

Directions

  1. Prepare Peanut Vinaigrette, and Carolina gold peanut butter sauce recipes below.
  2. Toss mixed greens and bell pepper strips in peanut vinaigrette and plate. Top with charred runner peanuts.
  3. Shingle 2 BBQ ribs on the plate next to the salad and top with Carolina gold peanut butter sauce.
  4. Garnish with microgreens as desired and serve
  5. Peanut Vinaigrette
  6. Yield: 10 servings, 2 tablespoons per serving

  8. 0.33 cup smooth peanut butter
  9. 3 tablespoons rice wine vinegar
  10. 1 teaspoon honey
  11. 0.25 teaspoons kosher salt
  12. 0.25 teaspoons ground black pepper
  13. 2 tablespoons denatured peanut oil
  14. Directions
  15. 1. Set aside peanut oil and add remaining ingredients into a blender.
  16. 2. With blender on medium speed, slowly drizzle in peanut oil to bring the vinaigrette together. Vinaigrette should lightly coat the back of a spoon.
  17. 3. Taste and adjust seasoning as needed.
  18. 4. Use within 3-5 days.
  19. Carolina Gold Peanut Butter Sauce
  20. Yield: 20 servings, 2 tablespoons per serving
  21. Ingredients
  22. 1 cup yellow mustard
  23. 0.5 cup granulated sugar
  24. 0.5 cup apple cider vinegar
  25. 0.25 cup Worcestershire sauce
  26. 0.25 cup hot sauce
  27. 2 tablespoons wildflower honey
  28. 1 teaspoon fresh ginger root, peeled and minced
  29. 2 tablespoons yellow mustard seeds
  30. 1 tablespoon peanut butter powder
  31. Salt and pepper to taste

  33. Directions
  34. 1. Set aside peanut butter powder and add remaining ingredients to a smallsaucepan over medium heat until sugar is melted.
  35. 2. Reduce heat to a simmer and reduce sauce by one third. Remove saucepan.
  36. 3. Add peanut butter powder and whisk into sauce.
  37. 4. Taste and adjust seasoning if needed. Store under refrigeration and use within 3-5 days.
