- 1 cup fresh mixed greens
- 1 ounce sliced red bell pepper
- 2 tablespoons peanut vinaigrette, sub recipe
- 1 tablespoon charred runner peanuts
- 2 prepared, dry rubbed, baby back pork ribs, hot
- 2 fluid ounces Carolina gold peanut butter sauce (see recipe)
- Garnish
- Fresh microgreens as desired

Directions
- Prepare Peanut Vinaigrette, and Carolina gold peanut butter sauce recipes below.
- Toss mixed greens and bell pepper strips in peanut vinaigrette and plate. Top with charred runner peanuts.
- Shingle 2 BBQ ribs on the plate next to the salad and top with Carolina gold peanut butter sauce.
- Garnish with microgreens as desired and serve

Peanut Vinaigrette
- Yield: 10 servings, 2 tablespoons per serving

Ingredients
- 0.33 cup smooth peanut butter
- 3 tablespoons rice wine vinegar
- 1 teaspoon honey
- 0.25 teaspoons kosher salt
- 0.25 teaspoons ground black pepper
- 2 tablespoons denatured peanut oil

Directions
- 1. Set aside peanut oil and add remaining ingredients into a blender.
- 2. With blender on medium speed, slowly drizzle in peanut oil to bring the vinaigrette together. Vinaigrette should lightly coat the back of a spoon.
- 3. Taste and adjust seasoning as needed.
- 4. Use within 3-5 days.

Carolina Gold Peanut Butter Sauce
- Yield: 20 servings, 2 tablespoons per serving

Ingredients
- 1 cup yellow mustard
- 0.5 cup granulated sugar
- 0.5 cup apple cider vinegar
- 0.25 cup Worcestershire sauce
- 0.25 cup hot sauce
- 2 tablespoons wildflower honey
- 1 teaspoon fresh ginger root, peeled and minced
- 2 tablespoons yellow mustard seeds
- 1 tablespoon peanut butter powder
- Salt and pepper to taste

- Directions
- 1. Set aside peanut butter powder and add remaining ingredients to a smallsaucepan over medium heat until sugar is melted.
- 2. Reduce heat to a simmer and reduce sauce by one third. Remove saucepan.
- 3. Add peanut butter powder and whisk into sauce.
- 4. Taste and adjust seasoning if needed. Store under refrigeration and use within 3-5 days.
