Sriracha Peanut Noodles

Indulge in a bowl of spicy Sriracha peanut noodles for a satisfying and flavorful meal.

Ingredients

  • 4 oz whole wheat spaghetti (¼ package)
  • 1 cup broccoli slaw (¼ of a 12 oz package)
  • 1 cup edamame, shelled (defrost if frozen)
  • 1 red bell pepper, thinly sliced
  • 1 batch Sriracha Peanut Sauce (see below)
  • Toppings:
  • 2 green onions, sliced
  • 1 tablespoon chopped peanuts
  • squeeze of fresh lime juice (optional)
  • Sriracha Peanut Sauce:
  • 3 tablespoons peanut butter
  • 3 tablespoons water
  • 2 tablespoons reduced-sodium soy sauce
  • 1 teaspoon sriracha sauce
  • 1 small garlic clove, minced
  • 1 teaspoon fresh ginger, minced (optional)

Directions

  1. Bring a large pot of water to boil. While water is boiling prepare Sriracha Peanut Sauce by combining all ingredients in a medium bowl.
  2. Cook spaghetti according to package directions. In a large serving bowl, combine warm cooked noodles, broccoli slaw, cabbage, edamame, bell pepper, and Sriracha Peanut Sauce. Garnish with sliced green onions and chopped peanuts. Enjoy warm or chilled.
