Ingredients

  • 2 sweet potatoes
  • 2 tablespoons dark chocolate chips
  • 2 tablespoons dried fruit (blueberries, raisins, cranberries, etc.)
  • 2 tablespoons unsalted peanuts, chopped
  • sprinkle of cinnamon
  • 2 tablespoons plain Greek yogurt
  • Optional: 1 banana, sliced
  • Honey Peanut Butter Sauce
  • 1 teaspoon honey
  • 2 tablespoons creamy peanut butter
  • 1.5 tablespoons warm water

Directions

  1. Poke holes in sweet potatoes with a fork and bake in oven (wrapped in foil) for about 45 minutes, or in microwave for about 10 minutes (wrapped in paper towel). Cut sweet potato down the middle. Combine chocolate chips, dried fruit and peanuts in a bowl, and split between each sweet potato. Top with Greek yogurt and a sprinkle of cinnamon. Add banana and/or peanut butter sauce if you wish.
  2. Mix it up! You can make this recipe your own by using any of your favorite fruits or other toppings, like coconut flakes and chia seeds.
