Caramel Peanut Popcorn
Crunchy popcorn coated in a sweet and gooey caramel peanut glaze. A perfect snack for movie nights or parties.
Ingredients
- 2 (3-ounce) packages microwave popcorn
- 2 cups dry-roasted peanuts
- 1 (16-ounce) package light brown sugar
- 1 cup butter or stick margarine
- 1/2 cup light corn syrup
- 1 teaspoon salt
- 1 teaspoon baking soda

Directions
- Prepare the popcorn according to package directions. Combine popcorn and dry-roasted peanuts in a large bowl, and set aside. In a large heavy saucepan bring brown sugar, butter, corn syrup, and salt to a broil over medium-high heat, stirring constantly. Cook sugar mixture, stirring occasionally, 5 minutes or until a candy thermometer registers 248°F. Remove sugar mixture from heat, and stir in baking soda.
- Pour sugar mixture over popcorn mixture in a bowl; stir until evenly coated. Spread popcorn mixture in an even thin layer in a lightly greased roasting pan.
- Bake at 250°F for 45 minutes, stirring mixture every 15 minutes. Remove popcorn from oven, and let cool completely.
- Store popcorn in an airtight container.
- Note: Makes 16-18 cups
